BBQ Chicken Quinoa Bake

Serves 6

The leftover game that feels like a brand new dish. Use any cooked grain you might have on hand and substitute other frozen vegetables or cheese for a versatile on-the- go weeknight dinner that uses pantry ingredients and any oven-safe Pyrex baking dish you have in your cabinets.

Enchilada Bake in Pyrex baking dish

Ingredients:

 

3 cups cooked quinoa

8 ounces sharp white cheddar cheese, shredded and divided

1 rotisserie chicken, shredded with skin

1 15-ounce can of black beans

1 cup frozen corn, defrosted

1 bottle bbq sauce of choice

1 red onion, finely chopped for garnish

1 avocado diced, for garnish

Sour cream, for serving

 

Preheat oven to 375° F. Grease a Pyrex Baking Dish such as a 2 qt. Oblong or 8” Square.

Combine quinoa, 2 cups cheese, chicken, beans, corn and bbq sauce together and place in baking dish. Sprinkle with remaining cup of cheese and bake for 15-20 minutes until heated through and golden brown and bubbly on the top.

 

Remove from oven and cool slight, garnish with onion, avocado and sour cream.
