Three Cheese Shallot Dip
Say hello to your new go-to appetizer. This little three cheese dip will receive big compliments.
Recipe uses Pyrex® Littles™ 24-oz Square Baking Dish
Ingredients
2 tablespoon olive oil
1 tablespoon butter
1/2 cup sliced shallots
8 ounce cream cheese, softened and cut into smaller pieces
1/2 cup mayonnaise
4 ounce smoked Gouda, shredded (about 1 cup)
2 ounce Cheddar cheese, shredded (about 1/2 cup)
2 teaspoon cornstarch
Salt and pepper, to taste
1 tablespoon fresh thyme leaves
Directions
Preheat oven to 375oF
- Heat oil and butter in a medium skillet over medium heat. Add shallots and cook until caramelized, 8-10 minutes, stirring occasionally. Remove from heat and stir in cream cheese. Stir until smooth. Add mayonnaise and stir.
- In a small bowl, combine 1/4 cup Gouda and 2 Tbsp cheddar; set aside. In the Pyrex Littles Baking Dish, toss cornstarch and remaining cheeses together until coated. Fold in cream cheese mixture and season with salt and pepper. Top with reserved cheese mixture. Bake until golden, 20-25 minutes. Top with thyme. Serve with tortilla chips or baguette slices.
- Spice it up with a little bacon or pepperoni, or add sautéed mushrooms or peppers.
