Zucchini Banana Bread

This bread is easy to make and sure to be a crowd pleaser.

Zucchini Banana Bread in Pyrex Loaf Dish

Serves 2 loaves (12 slices each)

1-1/2 cups sugar
1 cup mashed bananas
1/2 cup shredded zucchini
1/2 cup butter, softened
1/4 cup buttermilk
4 eggs
2 teaspoons vanilla
1-1/2 cups all-purpose flour
1 cup whole wheat flour
3 tablespoons ground flaxseed
1-1/2 teaspoons baking soda
1 teaspoon salt



  1. Heat oven to 325ᵒF. Grease bottom and 1/2 inch up sides of 2  1-1/2 quart loaf dishes with shortening or cooking spray.
  2. In large bowl, mix sugar, bananas, zucchini, butter, buttermilk, eggs and vanilla until well mixed. Stir in remaining ingredients. Divide batter evenly between loaf dishes.
  3. Bake 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes.
  4. Loosen sides of loaves from dishes; remove from dishes and place top side up on cooling rack. Cool completely, before slicing, about 2 hours.
